Raisin Bran Flax Muffins

These bran flax muffins aren’t just delicious — they’re a nostalgic favourite in our house. When my kids were little, they devoured them without hesitation (and still do!). Moist, just the right amount of sweet, and packed with wholesome ingredients — these muffins are a sneaky way to add more fiber into your day. Let’s just say… they help keep things moving, if you know what I mean. 😉

Ingredients
1½ cups Unbleached White Flour
¾ cup Flaxseed Meal
¾ cup Oat Bran
1 cup Brown Sugar
2 tsp Baking Soda
1 tsp Baking Powder
½ tsp Salt
2 tsp Ground Cinnamon
1½ cups Carrots, shredded
2 Apples, peeled and shredded
½ cup Raisins (optional)
¾ cup Milk
2 Eggs, beaten
1 tsp Vanilla Extract
Instructions:
Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon in a large bowl.
Stir in carrots, apples, and raisins (if using).
Combine milk, beaten eggs, and vanilla. Pour liquid mixture into dry ingredients.
Stir until just moistened. Do not overmix.
Fill muffin cups ¾ full.
Bake at 350°F for 15–20 minutes.
